Bran 'N Molasses Muffins
Moist and flavorful, these gorgeous little raisin-studded muffins are a great lunchbox treat or afternoon snack. Enriched with All-Bran® cereal, they offer a healthy boost of fiber, vitamins and minerals. A lovely anytime treat.

Ingredients
- 1 cup all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup Kellogg's® All-Bran® Original cereal
- - OR -
- 1 cup Kellogg's® All-Bran® Bran Buds® cereal
- 1/2 cup milk
- 1/2 cup light molasses
- 1 egg
- 1/4 cup shortening
- 1/2 cup raisins or chopped dates
Directions
1. Stir together flour, baking powder and salt. Set aside2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal, milk and molasses. Let stand about 2 minutes or until cereal softens. Add egg and shortening. Beat well. Stir in raisins. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.
3. Bake at 400° F about 20 minutes or until golden brown. Serve warm.

"I changed it up a bit....instead of shortening I used 1/8 cup applesauce and 1/8 cup vegetable oil.1/4 molasses and1/4 cup maple syrup.I used 1 1/4 cup All-Bran flakes.1/4 cup chopped dates.370 degrees until toothpick came out clean (15 or so minutes)" very good

"I use applesauce in place of shortening. Very tastey. I also used dark molasses in place of light molasses. We enjoy these muffins in the morning. Yummy!" Vicki
