Chicken Tomato Pilaf

Make your weeknight dinner planning easier! Keep this recipe on hand for any time you need a delicious, simple and nutritious one-dish meal. This family-pleasing casserole is bursting with chicken, tomatoes, mushrooms and rice. Serve with a crisp green salad and you're done!

Ingredients

  • 1 jar (2 1/2 oz., 1/2 cup) sliced mushrooms, drained, reserving liquid
  • 1/4 cup chopped onions
  • 1 small clove garlic, chopped
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon salt
  • Dash pepper
  • 1/8 teaspoon thyme leaves
  • 1 can (16 oz., 2 cups) whole peeled tomatoes, undrained
  • 1/3 cup Kellogg's® All-Bran® Original cereal
  • or Kellogg's® All-Bran® Bran Buds® cereal
  • 1/4 cup uncooked, long grain, white rice
  • 2 cups cubed, cooked chicken

Directions

1. In large fry pan, cook mushrooms, onions and garlic in oil until tender, stirring constantly. Stir in reserved mushroom liquid, salt, pepper, thyme and tomatoes. Cut tomatoes into pieces with spoon. Bring to boil. Stir in KELLOGG'S ALL-BRAN cereal, rice and chicken. 2. Cover pan tightly and simmer about 35 minutes or until rice is tender, stirring occasionally. Sprinkle each serving with snipped fresh parsley and additional cereal, if desired. Serve hot.

Note

Beef Tomato Pilaf: Substitute 1/2 pound lean ground beef, browned and drained for the chicken.
