Golden Fruit Bread

No need for marmalade! The juicy, chewy apricots are baked right into this luscious golden loaf. All-Bran® cereal gives it a tender and delicate crumb top. Spread it with cream cheese or butter for a lovely teatime snack.

Ingredients

  • 1 1/2 cups Kellogg's® All-Bran® Original cereal
  • or 1 1/2 cups Kellogg's® All-Bran® Bran Buds® cereal
  • 1/2 cup sugar
  • 1 cup finely chopped, dried apricots
  • 1 1/2 cups boiling water
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1/3 cup vegetable oil
  • Sugar

Directions

1. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal, sugar and apricots. Pour boiling water over mixture. Let stand until most of moisture is absorbed.

2. Stir together flour, baking powder and salt. Set aside.

3. Add eggs and oil to cereal mixture. Beat well. Add flour mixture, stirring only until combined. Spread evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray. Sprinkle top with additional sugar.

4. Bake at 350° F about 55 minutes or until bread pulls away slightly from sides of pan and wooden pick inserted near center comes out clean. Cool completely on wire rack before slicing.

Yield: 1 loaf, 16 slices

Note

VARIATIONS:

Raisins, chopped prunes or dates may be used in place of apricots.
