Stir together flour, sugar, baking powder, soda and salt. Set aside.
In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal, raisins shortening and hot water, stirring until shortening is melted. Add egg and vanilla. Beat well. Stir in nuts. Add flour mixture, stirring only until combined. Spread evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray.
Bake at350° F about 1 hour or until wooden pick inserted in center comes out clean. Cool thoroughly on wire rack before slicing. Store in refrigerator or freezer.
Yield: 1 loaf, 16 servings
This bread is especially appetizing when served with chicken or fruit salad. It is
also tasty as tea sandwiches with cream cheese-olive filling.
