Date Raisin Bars
This sweet and spicy snack cake, scented with cinnamon and studded with raisins and dates, is stored as individually wrapped servings, making it the perfect grab-and-go snack. A nutritious nibble for the whole family.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt (optional)
- 1 1/2 teaspoons cinnamon
- 1 cup Kellogg's® All-Bran® Original cereal
- 1 cup low-fat buttermilk
- 2 eggs
- 3 tablespoons vegetable oil
- 1 cup chopped dates
- 3/4 cup golden raisins
Directions
1. Stir together flour, sugar, soda, salt and cinnamon. Set aside.
2. In large mixing bowl, combine KELLOGG'S® ALL-BRAN® cereal and buttermilk. Let stand 3 minutes or until cereal softens. Add eggs and oil. Beat well. Add dates and raisins. Stir in flour mixture, mixing only until combined. Spread batter evenly in 9 x 9 x 2-inch baking pan coated with cooking spray.
3. Bake at 375°F about 25 minutes or until wooden pick inserted in center comes out clean. Let cool. Cut into 12 bars. Wrap individually in plastic wrap to store.
Yield: 12 bars
