Raisin Bran Bread
Combine Kellogg's® All-Bran® cereal with raisins and nuts to make a deliciously moist quick bread. Serve it with a chicken or fruit salad, or as a tasty tea sandwich with cream cheese-olive filling.
Ingredients
- 1 1/3 cups all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups Kellogg's® All-Bran® Original cereal
- 1 1/2 cups raisins
- 1/4 cup shortening
- 1 1/2 cups hot water
- 1 egg
- 1 teaspoon vanilla
- 3/4 cup chopped nuts
Directions
1. Stir together flour, sugar, baking powder, soda and salt. Set aside.
2. In large mixing bowl, combine KELLOGG'S® ALL-BRAN® cereal, raisins shortening and hot water, stirring until shortening is melted. Add egg and vanilla. Beat well. Stir in nuts. Add flour mixture, stirring only until combined. Spread evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray.
3. Bake at 350°F about 1 hour or until wooden pick inserted in center comes out clean. Cool thoroughly on wire rack before slicing. Store in refrigerator or freezer.
Yield: 1 loaf, 16 servings

This bread is especially appetizing when served with chicken or fruit salad.It is also tasty as tea sandwiches with cream cheese-olive filling.
